At the helm is Chef Erwan Ledru, the architect of the restaurant’s daring new vision. Born in 1994 between Paris and Brittany, Ledru trained at Ferrandi, then honed his precision in some of the city’s most acclaimed kitchens, including Le Meurice and Lasserre. In 2019, he co-founded Contraste with Kevin de Porre, earning a Michelin star in 2022. His culinary philosophy is clear: technique serves flavor, not the other way around.
