“Taste of Vietnam“ experience captivates the most discerning palates far from its native soil. The hook is the promise of an authentic sensory journey. A chance to discover the soul of Vietnamese cuisine without ever leaving the centro storico. This exquisite pop-up is the second chapter in the Hotel’s celebrated Culinary Journeys Series. This is a testament to the resounding success of its first foray last June. Building on that momentum, Six Senses Rome now partners with the breathtaking Six Senses Ninh Van Bay to curate a narrative of flavour, balance, and tradition.
Guided by the philosophy that true Vietnamese cooking is an art of nutritional equilibrium, purity, and a deep connection to nature, the “Taste of Vietnam” experience is a story on a plate. This is where the vibrant spirit of Southeast Asia meets the unparalleled hospitality of a Roman palazzo.
A Menu Crafted from the Soul of Vietnam
The culinary journey, crafted by Specialty Chef Nguyen Hoang Hiep, who has travelled directly from Six Senses Ninh Van Bay with his team to bring his homeland’s flavours to life within the kitchens of BIVIUM Restaurant. The menu celebrates the landscapes and traditions. It features exquisite dishes with fresh produce, contrasting textures, and authentic flavours.
Among the standout specialties, you will discover:
Bun Bo: An appetizing noodle dish with beef, originating from the imperial city of Hue. A beautiful harmony of fresh herbs, rice vermicelli, and robust flavours.
Bo Kho: A slow-cooked beef stew that masterfully showcases the finest Vietnamese spices and herbs. The result is a deeply aromatic dish.
Pho: The iconic noodle soup, featuring an aromatic, deeply flavoured broth that forms the very heart of Vietnamese culinary culture.
