Time is the best ally of champagne wines, they gain, with age, their full potential and thus reveal their secrets. At GOSSET, it is even one of the fundamental pillars.

The oldest Champagne House has mastered the art of aging with precision. Therefore, its Cellar Master Odilon de Varine, intentionally allowed a 12-year vintage to age, in the darkness and depth of the cellars, in order to share an experience normally reserved for a few initiates. This cuvée limited to 12,000 bottles, of rare complexity, takes its letters of nobility, around real moments of conviviality and sharing.

Making a great champagne wine is above all a guarantee of balance. An art that is all the more practiced during the development of a wine intended for aging. Pinot noir slightly dominates the blend, with grapes from the villages of Aÿ – the historic cradle of the House – of Bouzy or even Ambonnay. It pairs with chardonnays from the great white villages, such as Avize, Cramant or Le Mesnil-sur-Oger. During the meticulous stage of winemaking, Odilon de Varine pursued the House’s philosophy of conserving malic acid, in order to best preserve the potential of the fruit, and thus offer this cuvée the best structure for its aging.

THE ART OF TASTING

Dazzling with luminous and golden reflections, the approach evokes a beautiful purity. The nose reveals great complexity dominated by toasted notes of yeast. The palate is very typical of white fruits then candied fruits, it bursts with liveliness to evolve on a deep finish dominated by flavors of candied pineapple.

This cuvée is characterized by its immense freshness, all in salinity, suggesting iodine accords. If fish and shellfish sound obvious, it will perfectly tame a salmon ceviche. A few simmered white meats (Norman-style veal chop) or creamy Burgundy-type cheese pairings, a Brillat-Savarin for example, will go so well …
