Developed with the Pizza Academy of Naples, Chef Jean-François Rouquette and his team offer pizzas prepared in accordance with the Neapolitan tradition. Baked in a Scugnizzo Napoletano oven, recognized worldwide for its authentic cooking qualities, the pizzas consist of ancestral flour and ingredients directly from the Italian soil such as tomatoes from “Piennolo del Vesuvio“, or summer truffles with a delicate, nutty flavor.

Guests will also find on the menu the essential summer creations of Chef Jean-François Rouquette, such as sea bass carpaccio with extra virgin olive oil and lemon caviar or grilled sea bass with tonnato sauce and fennel confit with citrus peel. Then give in to the tangy temptation of a Limoncello Baba or the freshness of Stracciatella ice cream!
