LES RÉSIDENTS

It’s all in the name “The residents”. Here, the chefs parade behind the stoves, often young, and promising, sharing their very personal vision of cuisine and a keen attention to sourcing from well-identified farmers, breeders and winemakers. After Kevin Maura (Saint James with Julien Dumas, 110 Taillevent) at the beginning of the year, it is now the Tuscan chef Matteo Bartoloni, until December 2022, who officiates. His cuisine, which often starts with a choice of French or Italian product, explores Scandinavian techniques (maceration, fermentation, learned during his time at Noma***) with a masterful use of citrus and acidity.
