From October 22 to 26, 2025, Maison Ruinart brings a rare gastronomic experience to Paris, creating a pop-up restaurant in collaboration with three-Michelin-starred Chef Arnaud Donckele at the Cheval Blanc Paris. This ephemeral dining concept invites just twenty guests to share a table at the heart of a space designed as a contemporary reinterpretation of Reims’ iconic chalk caves. Textured walls echo the mineral heritage where Ruinart’s cuvées age, celebrating the tenth anniversary of the crayères’ UNESCO World Heritage listing.
The installation merges gastronomy and champagne into a single experience. The detail, from lighting to table design, evokes Ruinart’s signature elegance, creating a luminous, mineral atmosphere. This is a rare opportunity to witness craftsmanship, both culinary and vinous, in a setting that feels more like art than dining.
Culinary Mastery by Chef Arnaud Donckele
On October 24 and 25, Donckele presents two exclusive seven-course dinners that converse directly with Ruinart’s iconic cuvées. Highlights include Dom Ruinart Blanc de Blancs 1993 and 2007, alongside a first-time exclusive edition. Donckele’s approach emphasizes patience, balance, and harmony, allowing the purity of each ingredient to shine. Perfect for pairing with Champagne’s mineral freshness and aromatic precision.
The Art of Tasting Chardonnay
The pop-up also features four Signature Chardonnay masterclasses, guided by a Ruinart ambassador. Explore three key expressions of the Maison’s flagship grape: Blanc de Blancs, Blanc Singulier, and Dom Ruinart 2013. These three cuvées are tasted in harmony with canapés created specifically by Arnaud Donckele, serving as a culinary extension of the Champagne savoir-faire.
