Chef Giuseppe Ruggiero Brings Six Years of South American Travel and Japanese Technique to Saint-Martin-de-Belleville's Most Intimate Five Star Address

Saint-Martin-de-Belleville sits at 1,450 meters in one of the French Alps' most discreet villages. Le M Lodge & Spa transforms winter 2026 into a gastronomic proposition as bold as it is unexpected. This five star property, opened December 2022, pairs Savoyard architecture with cosmopolitan cooking that travels farther than the 600 kilometers of 3 Vallées pistes outside.

Chef Giuseppe Ruggiero, running the kitchen since summer 2024, drives this culinary ambition. Born in Sicily in 1982, he worked through every station before refining his craft at Pavillon Ledoyen in Paris and Credenza in Piedmont. Six years in South America. Extended stays in Japan. Deep immersion in diverse culinary cultures. He photographs his gustatory emotions relentlessly, extracting essence for each plate.


La Table du M Ferments Everything

La Table du M, the intimate twenty seat gastronomic restaurant nestled between a library and panoramic windows, becomes theatre for Ruggiero's avant garde approach. Fermentation anchors everything: lactofermentation, corn miso, Koji, garums, kombuchas, artisanal sakés, unexpected ciders and vinegars compose a rare aromatic palette.

Three menus travel this winter. "Retour d'Asie" honors Japan and China. "Inspiration Méditerranéenne" traces a line between Sicilian iodine and Alpine Arc flavors, playing with acidity and grand bitters. "Sur les Chemins d'Amérique du Sud" immerses delicately through Peru, Havana, and Ecuador. Ruggiero builds each menu like a musical score, alternating surges and rest, tension and release, power and finesse.

Pastry Chef Clément Bourdet, who passed through Le Chabichou and Le Cheval Blanc, completes this modern, world facing gastronomy. Les Voyageurs du M, the brasserie, serves more accessible plates facing a spectacular spirits bar lined with aged rums, Chartreuses, whisky collections, and rare eaux de vie.


Twenty Rooms Meet 220 Square Meters of Valmont Spa

Architect Christine Pauchard designed the five star property using local stone, larch, and slate for a resolutely Savoyard envelope. Designers Clémence and Bastien Jovelet inject styled, engaged modernity into twenty rooms and five suites. The most spacious reach 90 square meters with dizzying summit views.

Spa Valmont deploys exceptional protocols across 220 square meters, plus a 50 square meter terrace open to the peaks. A 16 meter lap pool, three massage cabins, sauna, and WaterRower equipped fitness space invite regeneration after slope days. Hermès welcome products finish the rooms. New this season: a special kids' snack enriches the family offering.

For absolute exclusivity, two private luxury chalets, Pure Black Crystal and Pure White Crystal, provide five bedrooms each, indoor pool, Nordic bath, sauna, massage room, and services from a private chef and butler. A third chalet, Mc Foggin, recently joined this confidential collection.

Saint-Martin-de-Belleville perpetuates discreet excellence. This village of twenty two hamlets, dating to the 13th century, preserved its soul while becoming a gastronomic reference. La Bouitte and its two Michelin stars testify to this. Le M Lodge continues that lineage, proposing an intimate alternative to Courchevel or Méribel palaces with direct access to 3 Vallées' 600 kilometers of pistes.
