Pastry Chef Jordan Talbot Unveils “L’Astre d’Or,” a Star-Inspired Masterpiece for the 2025 Festive Season

For its tenth anniversary, La Réserve Paris unveils L’Astre d’Or, a Yule log created by Jordan Talbot in collaboration with the Maison’s triple Michelin-starred Chef Jérôme Banctel, at Le Gabriel. This exclusive, takeaway-only dessert will be available from December 23 to 25, 2025, in a limited edition.
Conceived to celebrate both the anniversary of the Maison and the festive season, L’Astre d’Or draws inspiration from Nordic winter tales and the Belle Époque heritage of Avenue Gabriel. Crafted within the kitchens of Le Gabriel, it reflects La Réserve’s gastronomic identity signature.
L’Astre d’Or evokes the geometry of hand-crafted Christmas garlands and the copper tones of the Belle Époque façades along Avenue Gabriel. Architecturally, its structure balances form and flavor, while the red velvet exterior, adorned with La Réserve’s tenth-anniversary seal, transforms the Yule log into a collector’s piece.

The Taste Structure
Talbot’s creation focuses on texture and memory. To begin, the base combines a fleur de sel crisp and soft biscuit. Followed by a caramel infused with vanilla, Timut pepper, and tonka bean. At its heart, a rice pudding crémeux brings a familiar note, all while being wrapped in a light mousse of three vanillas: Madagascar, Tahiti, and Mexico.
The layers are built to reveal a different register: salt, spice, cream, and warmth. The top flake conceals a small pot containing two chocolate bars. As a final touch, one with puffed rice and the other with praline and salted butter caramel. A perfect ending, ready to be savored!
